    Cahill's Farmhouse Cheese

    In 1972, Dave & Marion Cahill, of Cahill’s Farm in Limerick, Ireland, began to concentrate on handcrafted, flavored cheeses. Marion Cahill made flavored cheddars from Old Limerick recipes. West Allis Cheese offers three, The Ardagh Chalice Wine Cheese flavored with Elderberry Wine, Cahill's Whiskey Cheddars flavored with Irish Whiskey, and Cahill's Porter Cheddar (which is very popular in the US). Currently, their son Dan has seen to the day to day operations.

    Cahill prides itself on the quality and craftsmanship that goes into all it's cheeses. This homemade tradition means that when they are making their award winning cheeses they prepare and blend all the 100% Natural ingredients by hand. Skill and art is applied to each cheese during the traditional handcrafting process.

    Despite their commercial scale, their process is remarkably domestic – every batch is made the way it has always been made, by hand in small batches with no added artificial colors, additives, or preservatives. The pride themselves on the quality of their local fresh ingredients.

    All Cahill's cheeses are then matured naturally to give the perfect flavor balance.
